Chanterelle Chicken with Baby Potatoes
This easy-to-make recipe is simple for a weeknight as a main dish that pairs well with various side dishes.
From our test kitchen, this is Annie’s take on classic 1-skillet chicken and baby potatoes incorporating fresh chanterelle mushrooms. Woodborne Chanterelle Vodka adds an elegant flavor profile of apricot, hazelnut and black pepper. This easy-to-make recipe is simple for a weeknight as a main dish that pairs well with various side dishes.
Ingredients
- 1 ½ pounds unpeeled golden baby potatoes, rinsed and dried thoroughly
- 2 chicken breasts
- 3-4 chanterelles, rinsed and dried thoroughly
- 1/2 cup artichoke hearts
- 1 cup chicken broth
- 2-3 oz Woodborne Chanterelle Vodka
- 1/2 cup creme (heavy or half-and-half)
- 1 cup fresh kale from the Olympia farmers market (if you are near our distillery, or use your best local source), chopped
- 1 teaspoon chopped (each): thyme, oregano, parmesan
Preparation
Prep time: About an hour
- In a skillet, brown chicken* in olive oil, then remove. Preheat oven to 425°F.
- In the same skillet, add butter, chicken broth, Woodborne Chanterelle Vodka and baby potatoes. Cook down for about 10 minutes.
- Add kale, artichoke hearts, and creme.
- Put chicken back in the pan, add thyme and oregano
- Bake in the oven for 25 mins at 425°F.
Serving
Serve with a side of rice or salad. Makes 2-4 servings.
Notes
*The minimum internal temperature for cooked chicken breast is 165°F (73.9°C)
